When the weather starts to get warm I pull out my Crock Pot. Generally slow cooker food feels more wintry/fall-ish, but when it’s hot outside and you don’t feel like heating up the kitchen, the Crock Pot is a great option. This week I made a Gluten Free Crock Pot Macaroni and Cheese and it was a really successful recipe. I actually am not sure what words to use to give justice to how good this mac and cheese came out. It’s totally something you can bring to a family party, a cook out. New Year’s Eve. Or just make a giant crock of it and have an all mac and cheese weekend. I won’t judge you, I promise.
This is not your average Macaroni and Cheese in a box. But, honestly, it doesn’t take a whole lot more work. Other than cooking the pasta, you’re just dumping the rest of the ingredients in the crock pot and then it’s set it and forget it. Come home to piping hot Gluten Free Macaroni and Cheese after work. Is that not a good day for you? Walk in the door. Put down your laptop bag. Take the cover off the crock pot and just eat the mac and cheese right off the spoon you just stirred it with.

- 1 Box Barilla Gluten Free Elbow Macaroni (Cooked Al Dente, about 7 minutes)
- 2 Cups Shredded Cheddar Cheese
- 1 Cup Shredded Mozzarella Cheese
- 1/4 Cup Shredded Parmesan Cheese
- 1/8 Cup Blue Cheese (Optional)
- 1/2 Cup Sour Cream
- 1/2 Cup Mayo
- 4 Oz Cream Cheese
- 12 Oz Evaporated Milk
- 1 tsp Salt
- 1 tsp Pepper
- 1/2 tsp Dry Mustard
Add the al dente Macaroni to the Crock Pot
Add the recent of the ingredients to the Crock Pot and stir to incorporate.
Cook on low for 2-3 hours until heated through and all of the cheeses have melted together. Stir before serving.
I know the addition of blue cheese to this mac and cheese might be a little controversial. However, it gives a little bit of a funk to the flavor, which I LOVE. If you really hate blue cheese, by all means leave it out. Not everyone is as funky as me. I get it.
This recipe would only be easier if you didn’t have to cook the macaroni. But the macaroni should only take about 7 minutes as you don’t want to cook it all the way through. No one likes mushy macaroni. Check yours at about 5 minutes and if it is starting to get fully cooked, take it off, rinse it in cold water and it will finish cooking in the Crock Pot. I used my go to Gluten Free Pasta by Barilla, but you could definitely use regular pasta if you’re not interested in gluten free. It seems to me that regular pasta takes a little longer to cook than gluten free, so just make sure you check pasta for al dente-ness.

I have a brother who has celiac disease and I am proud to say he has eaten many of the foods I’ve cooked and NEVER gotten sick. Obviously, check the labels on all of your ingredients, though! (Did you know that Ricotta cheese has vinegar which is a place you might find gluten hiding??)

I know I posted this in the summer and for some reason I referenced that in the top of this post and even said it is a great summer recipe. I’m crazy. I mean, it is great to eat mac & cheese all year, but this is stick to your ribs, 9 degree weather, comfort food, if I ever saw it! I just want to be sure that’s clear.

I survived on gluten free macaroni and cheese while in Ireland. It somehow became our go-to meal and also turned into the dinner we made after a long day hiking in the mountains.
We had made a conscious decision to stay in places with full kitchens while on holiday. That way, we didn’t have to deal with eating out all the time and worry about what to eat for every meal.
It was seriously the best decision ever and we’ll travel this way from now on. As we moved from location to location, at the end of each stay we had to clear out the fridge and use all our leftovers.
This Prosciutto Gluten Free Macaroni and Cheese was the product of what was left in our fridge the first time. // Seriously. Get in my belly.
It was so good, sparing no calories (I did just climb two mountain peaks that day) with all that butter, cheese and delicate salty prosciutto.
Sprinkled with some crushed fresh black pepper before serving, it was THE PERFECT dish to warm me up.
Freezing Scotland, you are freezing! // This says a lot from a girl living in the Midwest.
It also fueled me with badly needed calories (since I had not eaten the entire day). // Extreme poor planning and didn’t make that mistake again.

Best Tips for this Gluten Free Macaroni and Cheese
- Don’t forget to thoroughly rinse pasta after cooking to keep it from over-cooking AND to remove the excess starch. That’s the best way to prepare gluten-free pasta.
- For those needing vegetarian (because really I do understand), simply omit the prosciutto from this recipe, it’ll still be amazing.
I struggle with eating meat at times (mainly chicken breasts), but I don’t have any problem eating things like deli meat, prosciutto, salami, sausage, etc. I love it all. // So odd I know.
During an extended vacation away from home, 99.9% of the time I get “glutened” at some point. Then I need to come home, slash dairy out of my diet, and recover.
Guys, I may have made history because this time that was not the case. Actually, this was the first time EVER I’ve come home and felt awesome! // Except for the fact that I’ve been waking up at 5 a.m., craving potato chips instead of breakfast food. But that’s another problem entirely.
I take comfort in knowing that this gluten free mac and cheese can easily be made dairy-free, and it tastes just as amazing with that swap. // I mean, you know me, I love the real butter and cheese when I can eat it, so not being glutened, I’m eating the reallll thing. 😉

Gluten Free Macaroni and Cheese Recipe
Gluten-free, Dairy free

Total Time:25 min
Ingredients:
- 4 cups gluten-free penne pasta, cooked (or favorite pasta of choice)
- 1 cup whole milk (can use dairy-free milk if needed)
- 3 Tablespoons butter (or dairy-free butter substitute)
- 1 1/2 cup sharp cheddar cheese, shredded (or dairy-free cheese substitute)
- 1/2 cup shredded parmesan cheese
- 5-6 prosciutto slices, roughly chopped
- Freshly ground black pepper to taste
Directions:
- 1. In a large saucepan over medium heat add cooked pasta, milk, butter and cheese.
- 2. Stir until butter and cheese are fully melted. (Apprx 5 minutes)
- 3. Mix in prosciutto, leave on low heat for another 2-3 minutes.
- 4. Crush freshly black pepper, and serve immediately.
